Photos of Honduran food and friends...

As I have been thinking about my upcoming trip to Honduras, I remembered that I had taken photos of the food I wrote about in yesterday's blog!

This is the fried cheese on fried green banana - just yummy!!!

And this is the best chicken fajitas (Honduran style) I have ever eaten!

Can you now see why I need Jonny to come with me so that we can keep up the tennis and ballroom? :-)

But I'm most looking forward to seeing Perla (left of photo) who is the leader of our country office and one of the most amazing women I have ever met. Just love her! The photo below was taken in March 2006 and the younger women in the photo are Perla's daughters (the two next to me on the right of the photo: Wilsen and Livny) and her niece (Jocelyn, in between Perla and I).

Oh, the above photo also reminds me that I always feel like a giant in Honduras! :-)
